Ingredients
– 1 cup of quinoa
– 2 cups of water
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 cup of diced tomatoes
– 1 teaspoon of cumin
– 1 cup of corn kernels
– 1 cup of black beans, rinsed
– 1 avocado, diced
Method
1. Rinse the quinoa under cold water.
2. In a pot, combine quinoa and water. Bring to a boil, then lower the heat, cover, and simmer for about 15 minutes or until water is absorbed.
3. While quinoa cooks, heat olive oil in a large pan. Add onions and garlic, sauté until onions are soft.
4. Stir in diced tomatoes, cumin, corn, and black beans. Cook for another 5 minutes.
5. Fluff the quinoa with a fork and mix it with the vegetable mixture. Top with diced avocado before serving.
