Radish and Buckwheat Salad Recipe
Ingredients
– 1 cup buckwheat
– 1 bunch radishes, thinly sliced
– 1 cup diced cucumber
– 1 cup cherry tomatoes, halved
– 2 tablespoons olive oil
– 1 tablespoon vinegar
– 1 tablespoon honey
– Salt, to taste
– Pepper, to taste
– Fresh parsley, chopped
Method
1. Begin by cooking the buckwheat according to package instructions. Once cooked, let it cool.
2. In a large bowl, combine sliced radishes, diced cucumber, and halved cherry tomatoes.
3. In another bowl, mix together olive oil, vinegar, honey, salt, and pepper.
4. Add the cooled buckwheat to the vegetables. Pour the dressing over everything and toss gently.
5. Finally, sprinkle chopped parsley on top before serving.
