Ingredients
– 1 rack of lamb (about 1.5 kg)
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 tablespoon Dijon mustard
– 1 cup red wine
– 1 tablespoon honey
Method
1. Preheat your oven to 200 degrees Celsius.
2. Rub the lamb with olive oil, then sprinkle garlic, rosemary, parsley, salt, and pepper all over it.
3. Spread the Dijon mustard on top of the lamb, making sure it’s evenly coated.
4. Place the lamb in a roasting pan and pour the red wine into the bottom of the pan.
5. Roast it for about 25-30 minutes, or until the meat reaches your desired doneness. Use honey to glaze the lamb during the last five minutes.
