Quinoa Salad with Vegetables

Ingredients
1 cup quinoa
2 cups water
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 cup bell pepper, diced
1/2 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons lemon juice
Salt to taste

Method
1. Rinse the quinoa under cold water to remove bitterness.
2. Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and cover. Cook for about 15 minutes or until the water is absorbed.
3. Let the cooked quinoa sit for 5 minutes, then fluff with a fork.
4. In a large bowl, mix the diced cucumber, cherry tomatoes, bell pepper, red onion, and parsley.
5. Add the quinoa to the bowl. Drizzle with olive oil and lemon juice, then stir everything together. Season with salt.
