Method
1. Preheat the oven to 200 degrees Celsius.
2. In a skillet, cook the chorizo over medium heat until it is browned, about 5 minutes.
3. Add onion, red pepper, and garlic to the skillet. Cook until the vegetables are soft, which should take around 3-4 minutes.
4. Stir in the lime juice and coriander, then mix in shredded cheese until melted and gooey.
5. Transfer the mixture to an oven-safe dish and bake for 8-10 minutes or until bubbly. Serve with tortilla chips and salsa.
