Ingredients
- 250 g chorizo sausage, diced
- 250 g cheese, shredded (cheddar or a mix)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1-2 small green chilies, chopped (optional)
- 1 tsp olive oil
- 2 tbsp fresh coriander, chopped
- ½ tsp ground cumin
- ½ cup diced tomatoes
- 1 pack of tortilla chips for serving
Method
- Preheat your oven to 190°C.
- In a frying pan over medium heat, add olive oil. Sauté the chopped onion and minced garlic until soft.
- Add the diced chorizo to the pan. Cook until it turns golden brown, stirring regularly.
- Mix in the cumin, chilies, and diced tomatoes. Stir well and cook for an additional 2 minutes.
- Transfer the chorizo mixture into an oven-proof dish. Sprinkle shredded cheese on top. Bake for about 10 minutes or until the cheese is bubbly and melted.
