Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced chorizo, onion, and garlic. Cook until the sausage is browned and onion is soft.
3. Stir in the salsa and jalapeño. Allow everything to simmer for about 2 minutes.
4. Sprinkle cheese evenly over the top. Reduce heat to low and cover the skillet until the cheese is melted.
5. Garnish with chopped cilantro before serving. Enjoy with tortilla chips.
