Ingredients
500g arbi (taro)
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
1 tablespoon lemon juice
2 green chilies, chopped
2 tablespoons fresh coriander, chopped
Method
1. Peel the arbi and cut it into small cubes. Rinse the cubes under cold water and set aside.
2. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Sauté for about 30 seconds until they start to crackle.
3. Toss in the turmeric powder, red chili powder, and salt. Stir well to combine.
4. Add the arbi cubes to the pan and mix everything together. Cover the pan and cook for about 15 minutes, stirring occasionally. The arbi should be tender.
5. Once cooked, pour lemon juice over the arbi. Mix in the chopped green chilies and fresh coriander before serving hot.
