Pumpkin Spice Cupcakes Recipe
Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp salt
½ cup vegetable oil
2 large eggs
1 cup pumpkin puree
Method
Preheat the oven to 175 degrees Celsius. Line a muffin tin with cupcake liners.
Combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large mixing bowl.
In another bowl, whisk together the oil, eggs, and pumpkin puree until smooth.
Pour the wet ingredients into the dry ingredients. Mix just until combined.
Fill each cupcake liner about two-thirds full with the batter. Bake for 18-20 minutes, or until a toothpick comes out clean.
