– 700 g pumpkin, peeled and diced
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 tsp ground cumin
– 750 ml vegetable broth
– 1 cup coconut milk
– 1 tsp salt
– ½ tsp pepper
– Olive oil for cooking
– Optional: Fresh herbs for garnish

Method

1. Heat a splash of olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, cooking until they’re soft and fragrant, about 5 minutes.
3. Stir in the diced pumpkin and ground cumin; cook for another 5 minutes.
