Pumpkin Muffins Recipe
Ingredients
1 ½ cups plain flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
1 cup canned pumpkin puree
½ cup brown sugar
â…“ cup vegetable oil
2 large eggs
Method
Preheat the oven to 190°C and line a muffin tin with paper cases.
In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Stir in the pumpkin puree, brown sugar, vegetable oil, and eggs until the mixture is smooth.
Spoon the batter into the prepared muffin tin, filling each case about two-thirds full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
