Ingredients
– 2 cups rolled oats

Method
1. Preheat the oven to 180°C. Grease a baking dish or oven-safe dish.
2. In a large bowl, mix the oats, baking powder, cinnamon, and salt together.
3. Combine the pumpkin puree, milk, maple syrup, eggs, and vanilla. Stir the wet ingredients into the dry mix until well blended.
4. Pour the mixture into the prepared baking dish. Sprinkle nuts on top if desired.
5. Bake for 35-40 minutes until the oatmeal is set and the top is golden brown.
