Ingredients
– 4 medium potatoes, diced
– 1 cup corn kernels (frozen or fresh)
– 1 onion, chopped
– 2 celery stalks, sliced
– 2 cloves garlic, minced
– 1 tsp dried thyme
– 4 cups vegetable or chicken broth
– 1 cup milk
– 2 tbsp olive oil
– Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Sauté onions, celery, and garlic until they become soft, about 5 minutes.
3. Add the diced potatoes, corn, thyme, salt, and pepper. Stir everything together.
4. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes until the potatoes are tender.
5. Stir in the milk, heat for another 5 minutes, and then serve.
