Potato Corn Chowder Recipe
Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
4 medium potatoes, peeled and diced
4 cups vegetable broth
1 cup corn kernels (fresh or frozen)
1 cup milk
1 teaspoon dried thyme
Salt and pepper to taste
Chopped parsley for garnish
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic; cook until the onion is soft.
3. Stir in the diced potatoes and vegetable broth. Bring the mixture to a boil.
4. Reduce the heat and let everything simmer for about 15 minutes until the potatoes are tender.
5. Mix in the corn, milk, dried thyme, and season with salt and pepper. Cook for another 5 minutes.
