Ingredients
– 4 medium potatoes, grated
– 1 large onion, grated
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 cup plain flour
– 2 eggs
– 1/4 cup vegetable oil
– Optional: sour cream or applesauce for serving
Method
1. Start by peeling the potatoes and onion. Grate them using a box grater and place them in a large bowl.
2. Mix in the salt and pepper, then let it sit for about 10 minutes. This allows the potatoes to release some moisture.
3. Add the flour and eggs to the bowl. Stir everything together until well combined.
4. Heat the vegetable oil in a large non-stick skillet over medium heat. Once hot, scoop spoonfuls of the mixture into the pan and flatten them into patties.
5. Cook for about 4-5 minutes on each side, or until golden and crispy. Serve warm with sour cream or applesauce if desired.
