Ingredients
600 g potatoes
2 leeks
50 ml olive oil
150 ml milk
2 eggs
100 g grated cheese
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried thyme
1 pre-made pie crust
Method
1. Preheat the oven to 180°C (350°F).
2. Boil the potatoes in salted water until soft. Drain and mash them in a bowl.
3. Slice the leeks and sauté them in olive oil until soft. Mix them with the mashed potatoes.
4. Add milk, eggs, cheese, salt, pepper, and thyme to the potato mixture. Stir until combined.
5. Pour the filling into the pie crust and bake for about 35-40 minutes or until golden brown.
