Delicious Pistachio Cookies Recipe For Nutty Dessert Lovers

Ingredients

– 1 cup shelled pistachios
– 1/2 cup sugar
– 1/4 cup coconut oil
– 1/4 cup almond milk
– 1 tsp vanilla extract
– 1 cup plain flour
– 1/2 tsp baking powder
– 1/4 tsp salt
– Extra pistachios for topping

Method

1. Preheat the oven to 180°C (350°F) and line a baking tray with paper.
2. Blend the pistachios in a food processor until they are finely ground.
3. In a large bowl, mix the ground pistachios, sugar, coconut oil, almond milk, and vanilla extract until smooth.
4. Stir in the flour, baking powder, and salt until well combined.
5. Scoop out tablespoon-sized amounts of dough, shape them into balls, and place them on the prepared tray. Press extra pistachios on top of each ball. Bake for 10-12 minutes.
