Ingredients
– 1 cup grated fresh coconut
– 1 cup finely chopped pineapple
– 1 cup condensed milk
– 1 cup almond meal
– ½ tsp cardamom powder
– 1 tbsp ghee (clarified butter)
– Grated coconut for coating
Method
1. In a pan, heat ghee over medium heat.
2. Add the grated coconut and sauté for 2-3 minutes until lightly golden.
3. Stir in the chopped pineapple and cook for a few more minutes until the mixture thickens.
4. Pour in the condensed milk, almond meal, and cardamom powder. Mix well and cook until the mixture pulls away from the pan.
5. Let it cool slightly, then shape into small balls and roll them in grated coconut for coating.
