Method

1. Preheat the oven to 200°C.
2. Place the fish fillets on a baking tray lined with baking paper.
3. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Drizzle this mixture over the fish.
4. Scatter cherry tomatoes, spinach leaves, and capers around the fish on the tray.
5. Bake for about 20 minutes or until the fish is cooked through. Serve with cooked rice.
