Ingredients

Method
1. Start by preheating the oven to 180 °C (350 °F). Line a baking tray with baking paper.
2. In a large bowl, mix the persimmon puree, brown sugar, and softened butter until combined.
3. Beat in the egg and vanilla extract until smooth.
4. Gradually add in the flour, baking soda, cinnamon, and nutmeg. Stir until everything is well combined. If you like, fold in the chopped nuts.
5. Drop spoonfuls of the cookie dough onto the prepared baking tray. Bake for about 10 to 12 minutes until golden.
