– 4 cups arugula
– 1 medium ripe persimmon, sliced

Method
1. Rinse the arugula under cold water and dry it well.
2. In a large bowl, combine the sliced persimmon, pomegranate seeds, feta cheese, and chopped walnuts.
3. Add the arugula to the bowl with other ingredients.
4. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper until well mixed.
5. Pour the dressing over the salad and toss everything gently to combine.
