Ingredients
– 1 ¾ cups plain flour
– 1 ¾ cups sugar
– ¾ cup unsweetened cocoa powder
– 1 ½ teaspoons baking powder
– 1 ½ teaspoons baking soda
– ½ teaspoon salt
– 2 large eggs
– 1 cup milk
– ½ cup vegetable oil
– 2 teaspoons peppermint extract
Method
1. Preheat your oven to 175°C. Grease two round cake pans.
2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
3. Add the eggs, milk, oil, and peppermint extract to the dry ingredients. Beat with a mixer for 2 minutes until smooth.
4. Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes. Cool cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
5. Once cooled, frost with your favorite chocolate frosting. Decorate with crushed peppermint if desired.
