Ingredients
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 1 medium onion, diced
– 2 cloves garlic, minced
– 400 g canned chickpeas, drained and rinsed
– 400 g canned tomatoes, crushed
– 1 teaspoon smoked paprika
– 1 teaspoon dried oregano
– 1 tablespoon olive oil
– Salt, to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until it becomes soft.
3. Stir in garlic and cook for an additional minute.
4. Mix in chopped bell peppers, chickpeas, crushed tomatoes, smoked paprika, oregano, and salt.
5. Let everything simmer for about 20 minutes, stirring occasionally.
