Ingredients
– 300 g penne pasta
– 2 tbsp olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 400 g canned crushed tomatoes
– 125 ml vodka
– 120 ml heavy cream
– 1 tsp dried basil
– 1/2 tsp salt
– Freshly grated Parmesan cheese for serving
Method
1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the diced onion and sauté until soft.
3. Stir in the minced garlic and cook for an additional minute. Then, add the crushed tomatoes and vodka.
4. Bring the mixture to a simmer and let it cook for 5 minutes. Next, stir in the heavy cream and dried basil.
5. Combine the cooked penne with the sauce and mix well. Serve topped with grated Parmesan cheese.
