Ingredients

– 1 cup of all-purpose flour
– 1 cup of rolled oats
– 1/2 cup of brown sugar
– 1/2 cup of vegan butter
– 1 cup of pecans, chopped
– 1/2 cup of maple syrup
– 1/4 cup of almond milk
– 1 tablespoon of cornstarch
– 1/2 teaspoon of vanilla extract
– 1/4 teaspoon of salt

Method

1. Preheat the oven to 180 degrees Celsius. Line a square baking dish with baking paper.
2. In a bowl, mix flour, oats, brown sugar, and salt. Melt vegan butter, then combine it with the dry ingredients.
3. Press half of the mixture into the bottom of the baking dish to form a crust. Bake for about 15 minutes, then remove from the oven.
4. While the crust cools, combine chopped pecans, maple syrup, almond milk, cornstarch, vanilla extract, and a pinch of salt in a saucepan. Cook over medium heat, stirring frequently until it thickens.
5. Pour the pecan mixture over the crust, spreading it evenly. Bake for another 20-25 minutes until the top is set. Allow to cool before slicing into bars.
