Peanut Butter Curry
Ingredients
2 cups vegetable broth
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon ginger, minced
1 cup peanut butter
1 can (400 g) coconut milk
2 tablespoons soy sauce
2 cups vegetables (such as broccoli, bell peppers, or carrots)
1 tablespoon lime juice
Cooked rice, for serving
Method
1. Heat a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft.
2. Stir in the minced garlic and ginger. Cook for an additional minute until it becomes fragrant.
3. Pour in the vegetable broth and bring the mixture to a simmer.
4. Add the peanut butter, coconut milk, and soy sauce. Stir well until all the ingredients are combined and smooth.
5. Toss in the vegetables and continue to cook for around 10 minutes until the veggies are tender. Finish with lime juice and serve over cooked rice.
