Ingredients
– 30 g peach gum
– 20 g snow fungus
– 1.2 L water
– 200 g rock sugar
– 2 cups of diced peaches
– 1 cup of coconut milk
– 1 tsp of vanilla extract
– Fresh mint leaves (for garnish)
Method
1. Soak the peach gum in water for 2 to 3 hours. Drain and rinse well.
2. Soak the snow fungus in water for 30 minutes. After that, break it into small pieces and rinse.
3. In a large pot, add 1.2 L of water, the peach gum, and the snow fungus. Bring to a boil.
4. Lower the heat and simmer for about 30 minutes. Stir in rock sugar until it dissolves.
5. Add diced peaches, coconut milk, and vanilla extract. Cook for another 10 minutes. Serve warm or chilled, garnished with fresh mint leaves.
