Ingredients
1 Âľ cups plain flour
½ teaspoon salt
1 tablespoon sugar
½ cup unsalted butter, cold and diced
4 to 5 tablespoons cold water
3 to 4 ripe peaches, sliced
2 tablespoons sugar (for peaches)
1 teaspoon vanilla extract
1 egg, beaten
1 tablespoon milk
Method
Preheat the oven to 220°C.
Combine flour, salt, and sugar in a large bowl.
Add cold butter cubes and mix until the mixture looks crumbly.
Stir in cold water, one tablespoon at a time, until the dough comes together.
Roll out the dough on a floured surface, place peach slices in the center, sprinkle with sugar and vanilla.
Fold the edges of the dough over the peaches, brush with beaten egg mixed with milk, then bake for 25 to 30 minutes.
