Ingredients
– 3 cups mixed vegetables (like peas, carrots, and potatoes)
– 1 cup chopped onion
– 1 cup tomato puree
– 1 tablespoon ginger-garlic paste
– 1 tablespoon pav bhaji masala
– 1 teaspoon turmeric powder
– 2 tablespoons cooking oil
– 4 cups water
– 8 pav buns
– Fresh coriander for garnish
Method
1. Heat the oil in a pressure cooker over medium heat. Add chopped onions and sauté until golden brown.
2. Mix in ginger-garlic paste and cook for a minute. Next, add tomato puree and cook until the oil separates from the mixture.
3. Stir in the mixed vegetables, pav bhaji masala, turmeric powder, and salt.
4. Pour in the water. Close the pressure cooker lid and cook for 5 whistles. After that, let the pressure release naturally.
5. Mash the cooked mixture until smooth. Serve hot with toasted pav buns and garnish with fresh coriander.
