Pasta Fagioli Recipe
Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
400 g canned diced tomatoes
400 g canned cannellini beans, rinsed
1 teaspoon dried oregano
500 ml vegetable broth
200 g small pasta
Method
Heat olive oil in a large pot over medium heat.
Cook the onion, garlic, carrot, and celery for about 5 minutes until soft.
Stir in diced tomatoes, cannellini beans, oregano, and vegetable broth.
Bring the mixture to a boil, then add small pasta.
Simmer for 10 minutes until pasta is tender.
