– 2 medium eggplants

– 100 g ricotta cheese
– Fresh basil leaves

Method

1. Begin by cooking the penne pasta. Boil a large pot of water, add salt, then cook pasta according to package instructions until al dente. Drain and set aside.
2. While pasta is cooking, cut the eggplants into cubes. Heat olive oil in a large pan over medium heat. Sauté eggplant until golden and tender, stirring occasionally for about 10 minutes.
3. Chop garlic and add it to the pan. Cook for 1-2 minutes until fragrant. Then, pour in the canned tomatoes. Stir everything together and season with salt, pepper, and oregano.
