Ingredients
– 2 cups of self-raising flour
– 1 cup of sugar
– 1 cup of milk
– 1/2 cup of vegetable oil
– 2 large eggs
– 2 teaspoons of vanilla extract
– 1 cup of mixed berries (fresh or frozen)
– 1/2 teaspoon of baking powder
– A pinch of salt
– Icing sugar for dusting
Method
1. Preheat the oven to 180°C. Grease a cake tin or line it with baking paper.
2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
3. In another bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until combined.
4. Add the wet ingredients to the dry mixture and stir until smooth. Gently fold in the berries.
5. Pour the batter into the prepared cake tin and bake for 30 to 35 minutes, or until a skewer comes out clean. Cool before dusting with icing sugar.
