Delicious Parmesan Thyme Shortbread With Feta Dip & Cranberry Sauce

Ingredients

– 200g plain flour
– 100g cold butter, diced
– 100g grated Parmesan cheese
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1 tablespoon cold water
– 125g feta cheese
– 1 tablespoon olive oil
– 100ml cranberry sauce
– Fresh thyme leaves for garnish

Method

1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a large bowl, mix the flour, Parmesan, thyme, and salt. Add the butter and rub it in until the mixture looks like breadcrumbs.
3. Stir in the cold water until the dough comes together. Shape the mixture into a ball and flatten it.
4. Roll out the dough to about 5mm thick. Cut into desired shapes and place them on the prepared tray.
5. Bake for 15-20 minutes until golden. Meanwhile, blend the feta with olive oil until smooth. Serve the shortbread with feta dip and cranberry sauce.
