Ingredients

– 115 g unsalted butter, at room temperature
– 1/2 cup finely grated Parmesan cheese
– 1 cup plain flour
– 1/2 cup cornstarch
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1 tablespoon fresh rosemary, chopped
– 1/4 cup almond meal
– 1 egg yolk
– 1 tablespoon water

Method

1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2. Mix the butter and Parmesan cheese together in a large bowl until creamy.
3. Add plain flour, cornstarch, salt, black pepper, chopped rosemary, and almond meal. Stir until a dough forms.
4. In a small bowl, combine the egg yolk and water. Add this to the dough, mixing until everything is well combined.
5. Roll the dough into a log shape, wrap it in plastic wrap, and refrigerate for about 30 minutes. Cut into fingers and bake for 15-20 minutes or until golden.
