Ingredients

1 kg potatoes
60 ml olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp dried rosemary
1 tsp dried thyme
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
1 lemon, zested

Method

1. Start by preheating your oven to 200°C (about 400°F).
2. Wash the potatoes thoroughly and cut them into small cubes.
3. Toss the potato cubes in a large bowl with olive oil, salt, pepper, garlic powder, rosemary, and thyme.
4. Spread the mixture evenly on a baking tray and roast for around 30-35 minutes until golden and crispy.
5. Once done, remove from the oven and sprinkle with Parmesan cheese, parsley, and lemon zest.
