Ingredients

– 2 cups of chopped spinach
– 1 cup of split yellow lentils (dal)
– 1 medium onion, finely chopped
– 2 tomatoes, chopped
– 1 teaspoon of ginger-garlic paste
– 1 teaspoon of cumin seeds
– 1 teaspoon of turmeric powder
– 2 tablespoons of vegetable oil
– Salt to taste
– Water, as needed

Method

1. Rinse the lentils under running water until the water runs clear.
2. In a pot, combine lentils, 4 cups of water, and turmeric. Cook over medium heat until the lentils become soft.
3. Heat oil in a separate pan. Add cumin seeds and allow them to crackle before adding the chopped onion. Sauté until the onions turn golden brown.
4. Next, stir in the ginger-garlic paste and chopped tomatoes. Cook until the tomatoes soften.
5. Add the cooked lentils and chopped spinach to the pan. Mix everything well. Adjust the salt and let it simmer for a few minutes.
