Ingredients
– 1 kg beef chuck, cut into cubes
– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 carrots, sliced
– 2 garlic cloves, minced
– 500 ml beef broth
– 250 ml red wine
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– Salt and pepper, to taste
Method
1. Preheat your oven to 150°C (300°F).
2. Heat the olive oil in a large oven-safe pot over medium heat.
3. Add the beef cubes and brown them on all sides. Remove the meat and set it aside.
4. In the same pot, add the onion, carrots, and garlic. Cook until the veggies soften.
5. Pour in the beef broth, red wine, and stir in the tomato paste and thyme. Season with salt and pepper. Return the beef to the pot and cover. Bake in the oven for about 3 hours or until the meat is tender.
