Ingredients
– 800g beef chuck, cut into cubes
– 1 tablespoon olive oil
– 1 onion, diced
– 2 carrots, sliced
– 2 cloves garlic, minced
– 1 teaspoon thyme
– 500ml beef broth
– 250ml red wine
– 1 tablespoon tomato paste
– Salt and pepper to taste
Method
1. Preheat the oven to 160°C (320°F).
2. Heat olive oil in a large, oven-safe pot over medium heat.
3. Add the beef cubes and brown them on all sides.
4. Stir in the onion, carrots, garlic, and thyme; cook for a few minutes until the veggies are soft.
5. Pour in the beef broth and red wine. Mix in the tomato paste, then season with salt and pepper. Cover the pot and place it in the oven. Bake for about 2.5 to 3 hours until the meat is tender.
