Ingredients
250 g orzo pasta
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
400 g diced tomatoes
500 ml vegetable stock
1 cup frozen peas
1 cup spinach, chopped
Salt, to taste
Black pepper, to taste
Method
Heat olive oil in a large pot over medium heat.
Sauté chopped onion until it becomes translucent.
Add minced garlic and cook for another minute.
Pour in diced tomatoes and vegetable stock; stir well.
Once boiling, add orzo pasta, frozen peas, and chopped spinach. Season with salt and black pepper. Cook until the pasta is tender.
