Orange Roasted Carrots
Ingredients
600 g baby carrots, peeled
2 tablespoons olive oil
1 teaspoon honey
2 teaspoons orange zest
Juice from one orange
Salt, to taste
Pepper, to taste
Fresh parsley, for garnish
Method
Preheat the oven to 220°C (425°F).
Toss the carrots with olive oil, honey, orange zest, salt, and pepper in a large bowl.
Spread the carrots in a single layer on a baking tray.
Roast them in the oven for about 25 minutes, or until tender and slightly caramelized.
Drizzle with orange juice and sprinkle fresh parsley on top before serving.
