Ingredients
– 250 ml milk
– 75 g unsalted butter
– 150 g honey
– 2 large eggs
– 300 g all-purpose flour
– 1 tbsp baking powder
– ½ tsp baking soda
– ½ tsp salt
– 1 tsp vanilla extract
– 100 g chopped nuts or fruit (optional)
Method
1. Preheat the oven to 190°C and line a muffin tray with paper liners.
2. In a saucepan, heat the milk and butter over medium heat until the butter melts. Remove from heat and let it cool slightly.
3. In a large bowl, whisk together the honey, eggs, and vanilla extract. Pour in the milk mixture and stir well.
4. In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture. Stir until just combined. If using, fold in the chopped nuts or fruit.
5. Spoon the batter into prepared muffin liners, filling each about 2/3 full. Bake for 15 to 20 minutes until golden brown. Allow to cool before serving.
