Delicious Okra Masala (Bindi Bhaji) Recipe: A Flavorful Vegan Delight

Ingredients
500 g okra, chopped into small pieces
2 tbsp oil
1 tsp cumin seeds
1 medium onion, finely chopped
2 medium tomatoes, chopped
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
Salt, to taste
2 tbsp coriander leaves, chopped

Method
1. Heat the oil in a large pan over medium heat. Add the cumin seeds and let them splutter.
2. Next, mix in the chopped onions and cook until they become golden brown.
3. Stir in the chopped tomatoes, turmeric powder, chili powder, and salt. Cook until the tomatoes are soft.
4. Add the chopped okra to the pan and mix well. Cook for about 10 minutes, stirring occasionally.
5. When the okra is cooked, sprinkle garam masala and toss in the chopped coriander leaves. Serve hot.
