Method
1. Start by combining oats and milk in a bowl. Stir well and let it sit for about 10 minutes.
2. Add the eggs, chopped onion, tomato, green chili, coriander leaves, salt, and pepper to the oat mixture. Mix everything together until combined.
3. Heat some oil in a non-stick frying pan over medium heat.
4. Pour the mixture into the pan and cook until the underside is golden brown. This usually takes about 3-4 minutes.
5. Flip the omelette to cook the other side until it is also golden brown. Serve hot.
