Ingredients
– 1 cup of diced pumpkin
– 2 cups of spinach, chopped
– 1 cup of white beans, drained and rinsed
– 1 medium onion, diced
– 2 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of olive oil
– 500 ml of vegetable broth
– Salt and pepper to taste
– 1 tablespoon of lemon juice
Method
1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic, cooking until soft.
3. Stir in the diced pumpkin and spinach, cooking for about 5 minutes.
4. Pour in the vegetable broth, add white beans, cumin, salt, and pepper. Simmer for 15 minutes.
5. Blend the mixture until smooth, then add lemon juice before serving.
