Ingredients
– 1 cup mixed vegetables (like peas, carrots, and beans)
– 1 medium onion, chopped
– 2 medium tomatoes, chopped
– 1 cup coconut milk
– 2 tablespoons cooking oil
– 1 teaspoon ginger-garlic paste
– 1 teaspoon garam masala
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon cumin seeds
– Salt to taste
Method
1. Heat the oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds.
2. Stir in the chopped onion and cook until it turns golden brown.
3. Add the ginger-garlic paste and chopped tomatoes. Cook until the tomatoes are soft.
4. Mix in the mixed vegetables, turmeric, and salt. Stir well, then add the coconut milk. Let it simmer for about 10 minutes.
5. Sprinkle garam masala on top before serving. Stir gently and enjoy with rice or bread.
