Ingredients
– 2 cups basmati rice
– 4 cups water
– 2 oranges (zest and juice)
– 1 onion, thinly sliced
– 2 tablespoons oil
– 1 teaspoon cumin seeds
– 1 teaspoon ginger paste
– 1 teaspoon salt
– ½ teaspoon turmeric powder
– ¼ cup chopped coriander leaves
Method
1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat oil over medium heat. Add cumin seeds and sauté for a few seconds until fragrant.
3. Stir in the sliced onion and cook until it turns golden brown. Add ginger paste, salt, and turmeric powder. Mix well.
4. Pour in the water, orange juice, and zest. Bring everything to a boil. Reduce heat and add the drained rice.
5. Cover the pot and cook on low heat for about 15 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and garnish with chopped coriander leaves.
