Ingredients

– 1 cup brown rice
– 400 ml canned black beans, drained
– 1 cup diced tomatoes
– 1 avocado, sliced
– 1 cup corn kernels
– 1 teaspoon taco seasoning
– 1 cup shredded cheese
– 1 cup salsa
– 1 lime, juiced
– Fresh cilantro, chopped (to taste)

Method

1. Cook the brown rice according to package instructions. Drain when done.
2. In a bowl, combine black beans, diced tomatoes, corn, and taco seasoning. Mix well.
3. Layer the cooked rice in serving bowls. Top with the bean mixture.
4. Add sliced avocado and shredded cheese on top of the bowls.
5. Drizzle with salsa and lime juice. Garnish with chopped cilantro to finish.
