Ingredients
- 700 g mutton, cut into cubes
- 2 tablespoons cooking oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder
- 400 ml coconut milk
- 1 tablespoon tamarind paste
- 1 tablespoon brown sugar
- Salt, to taste
Method
- Heat the oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onions are soft.
- Mix in the mutton cubes and curry powder, cooking until the meat is browned.
- Pour in the coconut milk, tamarind paste, and brown sugar. Stir well.
- Simmer on low heat for about 1.5 hours or until the meat is tender, adding salt as needed.
