Ingredients

  • 700 g mutton, cut into cubes
  • 2 tablespoons cooking oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 400 ml coconut milk
  • 1 tablespoon tamarind paste
  • 1 tablespoon brown sugar
  • Salt, to taste

Method

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onions are soft.
  3. Mix in the mutton cubes and curry powder, cooking until the meat is browned.
  4. Pour in the coconut milk, tamarind paste, and brown sugar. Stir well.
  5. Simmer on low heat for about 1.5 hours or until the meat is tender, adding salt as needed.
