Ingredients
– 500g gnocchi
– 250g mushrooms, sliced
– 1 onion, chopped
– 2 cloves garlic, minced
– 250ml vegetable broth
– 125ml sour cream
– 2 tbsp olive oil
– 1 tsp paprika
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
Method
1. Begin by heating olive oil in a large pan over medium heat. Add the chopped onion and cook until it becomes soft.
2. Toss in the minced garlic and sliced mushrooms. Stir the mixture frequently until the mushrooms are golden brown.
3. Pour in the vegetable broth and sprinkle the paprika, salt, and pepper. Allow the sauce to simmer for about 5 minutes.
4. Cook the gnocchi according to package instructions, then drain. Add the gnocchi to the sauce and combine gently.
5. Finally, stir in the sour cream and cook for 2 more minutes. Serve hot, topped with chopped parsley.
