Ingredients
– 1 ½ cups whole wheat flour
– ½ tsp salt
– ½ cup cold butter, diced
– ¼ cup cold water
– 300 g mushrooms, sliced
– 2 cloves garlic, minced
– 1 cup fresh spinach
– 1 tsp thyme leaves
– ½ cup grated cheese
– Black pepper, to taste
Method
1. Start by mixing flour and salt in a bowl. Cut in the diced butter until the mix looks like coarse crumbs.
2. Gradually add cold water and mix until a dough forms. Shape it into a disc, wrap in plastic, and chill for 30 minutes.
3. Heat a pan over medium heat. Add mushrooms and cook for about 5 minutes, then add garlic and spinach. Sauté for another 2 minutes.
4. Remove the dough from the fridge. Roll it out into a large circle on a floured surface.
5. Spread the mushroom mix in the center, leaving a border. Fold the edges over the filling. Top with thyme, cheese, and black pepper. Bake at 200°C for 30 minutes.
